Chef Yang Yang is cooking the famous dish braised mutton in brown sauce, one of the famous dishes of Yi-Xin-Zhai. 清真饮食的牛羊肉和鸡鸭都是按照具有清真饮食习惯的少数民族的风俗习惯屠宰加工。几十年来,一心斋在经营过程中严格遵守我国的少数民族政策,严把清真食材的货源关,在烹饪过程中也完全依照清真饮食习俗。所以,一心斋的菜式颇受少数民族群众的喜爱。图为大厨杨洋在烹制一心斋的名菜“红烧小笼牛肉”。杨洋已过而立之年,在一心斋工作了4年。他精湛的厨艺和谦虚的为人,能借鉴其他菜系的烹饪方法,实现清真美食的融汇创新,颇受赏识。
